LENTILS & VEGE SOUP

1 cup lentils (I used brown lentils but any lentils will do)
1 medium sized potato (diced)
1 small carrot (diced)
1/4 bombay onion (sliced)
1/2 stalk of celery (diced)
1-2 tsp butter or olive oil
1 bay leaf
1. Boil all the above in a pot with approx 2 small bowls of water. Let it simmer till the veges and lentils are all very soft.
2. Add the butter or olive oil.
3. There shouldn’t be so much liquid left.
4. Discard the bayleaf and blend all to your bb’s preferred consistency.
