Hey ladies,
Do you all know that I am very good in cooking pastas? When I have the time, I will share them with you. Here's a quick one for today:

1 can Rex brand clams in water (you can find this in the section where they sell canned sardines in most supermarkets)
1/2 bottle of tomato based pasta sauce (I prefer any brand that is made in Italy)
A few pips of garlic
300 gm of pasta (can be any shape, spaghetti, linguine, farfalla, macaroni etc etc)

Boil pasta according to instruction. Usually, it is a teaspoon salt and two tablespoon of oil and a huge pot of water. When water is boiling, add pasta and cook for about 20 mins. Remove and leave aside, sprinkle some olive oil to prevent it sticking.

Saute the garlic with olive oil till soft (but do not let it brown). Pour in the clams with its juices, add the tomato pasta sauce and let it boil for a little while, add pasta and serve.

Ok, that is for the kids.

To make a nicer version,
When saute-ing the garlic, add two dried chillies which you have flake (use your hands to break the dried chillies up and soak in hot water for a while to remove the seeds). You can also add a can of button mushroom that has been finely sliced to make the pasta more interesting. Add clam and tomato pasta sauce. Let it boil for a second, add pasta.

Dish up, sprinkle with lots of black pepper and chopped coriander leaves.


I used the farfalla pasta (the butterfly version) and it looks very elegant.

All this takes is only about 20 mins. in the kitchen.

Yes, yes, yes Lil, I know you are very good at it. Have been thinking if whenever I feel like making my own, I will give you a shout... what I mean by making is mixing and kneading the dough, and cooking it Smile .
We love Italian food. Once I had all Italian dinner, prepared by an Italian friend. After that, bought a cooking book but I do not know where to find the ingredients esp. certain types of flour here Smile . Anyone has any idea? Thx for the recipe, will try them soon. Anyway, the first contribution from me for this forum (I do not cook much Smile ) using the readymade pasta.

Ingredients:
2 garlic-finely chopped
olive oil
squid and/or prawns-cut into rings
tomato-seeded, finely chopped
Oregano
Parsley-fresh or dried
asparagus (cook in boiled water)
Almond-finely chopped
salt-optional
Spaghetti-cook as in instruction

Heat olive oil in pan, cook garlic till brown, add in squid till cooked. Add tomato, cooked spaghetti, asparagus stir well. Add salt, oregano, parsly and almond-stir well- done. Got my mouth watering, habislah puasa I Smile .

The much simpler and faster recipe but really loved by hubby and Beatrisya is readymade pasta (we love spaghetti the most), sauce: cook seafood/chicken in olive oil, pour in the pasta sauce. All ready in less than 15 minutes...yummy Smile

I love pastas...eemmm, so is DH. It's our staple food. Our favourite is the tuna spaghetti. Very easy to make. I believe the basic thing on cooking italian is olive oil, garlic, tomatoes & cheese...just check-out their recipe books. Always got these ingredients.

But, my tuna spaghetti, I leave out the tomato. It's the cheesy type one. The tuna spaghetti sauce is a mixture of canned tuna, drained it (the oil one), button mushroom, garlics, carrots & celery (optional), Preego (readymade mixture of cheese & herbs-yellow covered can) dash of Oregano, Parsley & Basil leaves & a pinch of salt. Spaghetti boiled & drained. Pour the sauce onto the spaghetti. Sprnikle mozarella powdered cheese on top. Heat it up few seconds in the microwave for the goeey effect. Voila! Yummy & healthy!

The closest flour I can get is the high-protein flour meant for making bread. This type of flour is found only in speciality cake shop (those selling ingredients for bakery), Hock Choon (in Jalan Ampang, I think) which sells all the imported goods and some bigger supermarket like Cold Storage.

I had made my own pasta using flour, olive oil, salt and egg. Then use the machine to roll them. Tapi temporarily had to stop doing that 'cos my kids will mess up my whole house. Previously, my house has a kitchen on a separate floor but now, in my small apartment, habis the flour fly around the whole apartment.

I made fresh ravioli with spinach and ricotta cheese (very expensive leh). Yumm....

Last time when I was in Italy, we only can afford to eat at small, homestyle cafe. They use only basic ingredients but their food tested far better than all the expensive restaurants here.

Another quick Aglio Oglio
Spaghetti - cook according to instruction

Saute chopped garlic with dried chillies with lots of olive oil
Add some chicken stock (cheat a bit lar, pakai chicken granules lar)
Put in spaghetti and simmer for a while
Dash of black pepper and salt to taste.

Simple and nice.

Oooo, i lurve pastas. Or actually DH loves it. He cooks, while i eat!
The pasta looks soo easy to cook, and fast! Now, i can impress him.
Lest he asks, "Who cooked the food? Neighbour or nanny?"

As for me, i just mix the cooked pasta with pesto (basil + olive oil) and sundried tomatoes.

The only reason for me to go to Italy is for the food (and my friend, off course Wink ). Hubby brought me to expensive Italian restaurents when we were courting but nothing beats the one that I had with my friend. He made very simple baked aubergine/eggplant but it was so good.
Love to watch those cooking programmes in Travel and Discovery Channel, esp. the ones about Italian cooking.

After that dinner cooked by my Italian friend, I found myself looking for stuffs like capers, canned anchovies but I have been wondering, Anne where do you get those sundried tomato. Thought of getting them dried myself but my area, got a lof dusts le...

And Hanz, your recipe sounds good. Hubby loves tuna, so tuna and spaghetti is a good combination. We used to just fried canned sardin, mash it and sprinkle over the pasta.

Funny thing about hubby, he claimed he loves Italian food (and he eats a lot of them, too) but cannot tahan the cheese. He can only takes it when it is heated, as if in the pizza. Most of us love to have Parmesan sprinkled over pasta but he won't eat it. Rugi kan.... Smile

If you see the price, maybe you don't like to eat so much leh. It is rather expensive. You can find them in Jusco MidValley, Isetan, where they sell all the pickles? In Cold Storage too. The Italian tomatoes (or those Italian variety from Australia) is very special compared to our local ones. Theirs aren't so sour, meaty and doesn't have the strong smell.

Another great Italian food:
Buy the fresh Mozaralla cheese from the cold section. There are two brands. Santa Lucia and another brand. Plastic bag green/red and blue. They are sold in a packet of water, with a ball of white fresh mozarella. Cost about RM12+.

Get the imported tomatoes. Also very expensive lar.

Slice the tomatoes and the mozarella, sprinkle with some salt, black pepper and olive oil. Taste very great. If you can afford, sprinkle some fresh basil leaves. (tapi I kedekut buying the fresh herbs, so I substitute with coriander leaves.

Now, what I want to cook is risotto but cannot find the right cheese.

Hi Ros. Waahhh...PhD holder, career woman, fantastic mom, super wife, filial daughter, now good cook... I want to tabik you again!!! Very Happy

There are 2 specialty cake stores (Bake with Yen and Chang Tung) at Taman Megah (same row as La Manila) and 1 (Guten Braun) at SEA Park (behind Bank Bumi) - you can check out the various flours and other baking supplies.

Sundried tomatoes and other more exotic ingredients - can check at Mr Ho's (BSC, Mid Valley and Plaza Mont Kiara). There's also a small shop at Mont Kiara (shoplex where Coffee Bean is located) that sells fancy-schmancy stuff!! Only thing, these 2 establishments are 'non-halal' (they sell khinzir products..), so I don't know if you want to buy the other stuff there. Best bet would be Cold Storage BSC. They have fresh herbs and the vege section is great! There are canned anchovies, olives and cheaper in-house brand pasta sauces at Tesco too.

Anyone else with more good suggestions, feel free to share! Am always on the look out for great food and ingredients! Very Happy

Definitely not Mr Ho. It is off limits.

Have you all try Ciao's in Jalan Ampang (or nearby there lar, I not very sure of the road's name). They have this set lunch where you have buffet style appetizers that have all the nibbling foods, Italian style. Their pesto is rather nice. I usually go there for lunch. It is an old bungalow with a big backyard.

Ciao's is located at Jln Tun Razak, next to RHB Bank building, opposite is Times building. My office just few blocks from Times building.

It is an Italian food restaurant, quite a good one. I like their backyard garden and I heard it is available for garden wedding too.

PhD..ok, true, career woman...do not like to call me that but ok la, fantastic mom..I wish I'm one, filial daughter...boleh lah Smile but good cook Embarassed Embarassed that makes me want to cry Crying or Very sad Crying or Very sad ...I'm just learning la. Hubby loves good food (me too Smile ), so I have been learning la...a bit from here and there. Nowadays it is hard to stay too long in the kitchen, normally takes 1/2 hour only per meal. Beasyara hates supermarket, so shopping pun susah. I've been thinking to take a half-day leave just to browse the whole supermarket, I mean go into detail on each ingredient that interests me and off course the specialty shops.

We've never been to Ciao's before. The one that we frequented was Piccolo Mondo, used to be in Bangsar once, MidValley got one and jalan Bukit Bintang. And a few others around Kelana Jaya, Damansara...where else ...one in Disneyland (but that one in Paris la... Embarassed ). I forgot the names of the restaurents as all eyes and ears were for hubby, tengah mabuk Smile Laughing . Maybe can ask hubby to try Ciao's.

Lil, thx for the recipe. Simple but I'm sure delicious...but do not think hubby will eat that, as it comes with fresh mozarella. Will definitely try it out Wink .

very interesting idea some of you have here. I cnt wait to try this out.

Anyway any ideas on vegetarian pasta? Hubby is observing the 9day Navarathiri....(Hindu festival) He loves the pasta I always do with chick/mutton but he was asking me last week...cnt you do something vegetarian??? Rolling Eyes

I mean with all the meats tergantung everywhere. That's why I recommend you don't even step foot in there lar. But Mr Ho's is very syiok lar especially the one in Bangsar (here less meats tergantung). They have all the imported food. Last time, I also bought Gulab Jamun mixture from there.

I very teruk wan. Only stay in Jalan Ampang, Darby Park/Suite Stay and thought the whole area as Jalan Ampang. That's right, Jalan Tun Razak. For dinner, Ciao can be veeerry romantic. Once there was this couple, all lovey-dovey, and I think the guy must be spending his whole month salary trying to woo the girl, with red wine and stuff. But nasib malang, he was there at the time when my hubby's Italian boss threw a family dinner. My 3 kids, hubby's colleagues and associates kids turned the place upside down. Poor guy, spend money, tapi our kids spoilt the romantic mood. Hope the girl still got mood to follow him back for more action or maybe not, for fear of getting pregnant with noisy kids. Laughing

Natasya, you ask the right person.

Here it is:
Spaghetti in cream sauce

Bacon (for Muslims, you can substitute with chicken ham). Sliced thinly and fry in olive oil till crispy. Remove the bacon/ham and set aside. Leave oil in pan.

Saute some garlic with the olive oil in the pan. Add a tablespoon of flour and stir. When the flour turned transparent, pour in one box of cream. (can ignore the flour if you don't have it handy)

(Whipping cream - you can find them in the cold section, in box like UHT milk. Brands like President and those Danish brands, also got Anchor brand. Buy only the small box, cost between RM5-RM8. It is like milk but the fat content is very high. Can substitute with low fat milk but no oomph.)

Add lots of black pepper and salt to taste. Let the cream simmer just a while.

Pour on boiled pasta and sprinkle with bacon.

BUT, real carbonara is made this way
Same method with bacon/oil.
Boil pasta
Prepare a bowl with cream, black pepper, an egg, oil
When pasta is cooked, immediately pour into the bowl of egg/cream. I do not like this method 'cos the cream/egg is cooked using the heat of the pasta.

HOWEVER,
one can do a nice baked dish. Use the same method as in carbonara. Put the pasta in, gaul-gaul and then, sprinkled cheese (mixture of parmesan, mozarella and cheddar) on top and bake at 220 deg C oven temperature till cheese turn brownish. My kids love this. It comes out like those Winter Warmers baked pasta.

If you are serving non-fussy picky eaters, you can add onions and fresh button mushroom for added flavours. I got a yummy looking photo of the baked pasta, using chicken ham.

Waaahh..syoknya talking & sharing about pastas.

Love to tell u all one of my ideas on cooking macaroni. Usually I made extra spaghetti sauce & the next day I use the leftover sauce to fry macaroni. I added chilles paste or chilli sauce to already boiled & drained macaroni for extra oommphh!

Malaysian style of frying macaroni like what my mom used to make (I miss those) is added sayur sawi, some eggs, pounded ikan bilis/udang kering (anchovies / ???) Ha, ha, so u won't have the same fried beehoon everyday.

Hanz, remember there was a TV commercial (forgot what product), the guy dine in a fine Italian restaurant, took out the cili padi from the pocket and chop it put in the pasta?
you remind me a lot of the commercial hahaha...malaysian without chili padi, eerything without oump(like you said). Very Happy

He, he, I suka pedas, tell u if I cook for my parents & siblings the original taste of Italian, one thing for sure, dad will refuse to eat it & older brothers would not even look at it & mom would just have few spoons for the sake of tasting, that leaves out my nephews & nieces whom I think will savour it.

My hometown is negeri sembilan, ma, how to forget all the cili padi & masak lemak cili api? I'm the one in my family who develop weird taste...anak mat salleh Razz who loves dairy products, italian & modern style of cooking! Wink

all the mat salleh food after arrived to Malaysia have to work out to suit our taste bug, KFC, shikey's, pizza hut, MacDonald etc. all got to have hot and spicy, friend's friend from US open eyes big big, she said the fast food here more exortic liao. Smile

i love pasta too.. especially those with creamy sauce..yummy..

recently i found a instant pasta .. San Remo La Pasta, can find at any supermarket.. serve in 10 mins time...fettuccine twists in alfredo is the great one...

garlic clove, magerine, chicken breast (in strips), capsicum (in thin scrips), fresh milk & water.. that's all..

fry margarine, garlic & chicken breast together.
then add in milk & water & San Remo Pasta..boil about 8 mins..until creamy...finally capsicum, cook for a minute & add some dry basil leaves ..that's all ..can enjoy the creamy pasta liao..

Ladies,
you know what I just did...I saved all the recipe into a word document and will print it out. See if I'm free lunchtime tomorrow, will buy some of the stuffs.

Before having Beatrisya, we bought lot of those herbs in bottles )forgot the brand le) We got oregano, basil, parsley, hungarian paprika, rosemary, ...there are a few other, think about 10 bottles. You know why I can't remember the name, because they are collecting dust now (just like my Italian cooking book Embarassed ). We only use a lot of the first 3 herbs Smile . The rest, do not know how to cook. Once hubby tried a fish dish with some of them...it turned out so bad Laughing but I tried hard not to laugh. Then he tried to do post-mortem la...saying things like "maybe this goes well only with mutton, not fish Smile "
Now when hubby passed thru the bottles and looked at it, he would go...tsk,tsk,tsk Embarassed . Some of them will be expired in 2005.

With this forum, hope to get recipes to get all the herbs utilised in a good way Embarassed .

Ros - Taman Megah PJ aka SS24, yes near SS2 and off LDP. I thought you stay at PJ. You can also find dried herbs at the 2 specialty cakeshops I mentioned, and at much cheaper prices too. Oregano, thyme, rosemary, paprika, cayenne pepper, cinnamon, grd ginger, onion/garlic powder, bay leaf, parsley, basil, etc priced from RM2 and above. I think Mr Ho at MidValley may be halal because they don't sell P*rk there.

Manju - I once tried this vegetable pasta dish at an Austrian restaurant, and it was so simple to replicate at home. You can omit garlic and onion if your DH doesn't take it, but can't guarantee the taste then... You can put in whatever vege you like.

Vege (mixture of broccoli, cauliflower, carrots, sugar snap peas, french beans,or baby corn) - blanched lightly
Garlic
onion
Olive oil
Pasta of your choice
Salt and black pepper

Saute garlic and onion. Add in vege and then pasta. Season to taste.

Very easy to cook. And the restaurant charged RM16 for it....

Another simple recipe..
Garlic, olive oil and cili padi - saute until fragrant, add it freshly boiled pasta and season with salt and black pepper to taste (refer to www.deliaonline.com)

I'll look around my books to see if i can find recipes for vegetarian tomato and cream-based sauces.

Oh ya, I find that evaporated milk is a great substitute for cream in cooking savoury dishes. It tastes just as creamy and much easier to find and to store as well. No need to go to supermkt to look for it!

Hi Ladies,

I would like to share one of my pasta recipes, very simple take only abt 5 mins.

A lot of fine chopped garlic
Olive Oil
Tinned clam in Sambal Chili from Rex (either drained the clam or use the sambal source too)
Squid cut into ring
Chili padi
Spagetti / any pasta
Salt and black pepper to taste

Saute garlic in olive oil with slow fire till fragrant and light brownish. Add in chili padi and saute till you smell the spicy smell Cool . Add squid and clam. Stir fry a while and last add in freshly boiled pasta. Season with salt and black pepper to taste.

This is my hubby's favorite pasta. Of course, me too!

My kids love pasta too and I love it becoz it's so easy to cook Wink Anyway, someone asked for a vegetarian version and I do that quite often so that it is a balanced meal. You can leave the cheese out if necessary.

You just choose a few veges and dice them up abt a cm cube, e.g., carrots, mushrooms, eggplant, cauliflower, zucchini, etc. Dice up an onion too. Then saute the onions in olive oil (a tablespoonful or so) until soft. Add the diced veges with those that need less cooking time last. So you would add the carrots first and the mushrooms last. Sprinkle with some fresh/dried basil. Then add the tomato-based sauce and simmer for a while. Throw in some shredded cheddar or mozzarella and stir a while till it melts. Stir in the cooked pasta and serve. Top with some grated parmesan cheese.

The sauce can be any tomato-based pasta sauce but the sun-dried tomato ones are the best. If you like garlic, chop some up finely and saute them together with the onions.

I usually cook extra becoz Nicodemus always have extra helpings Laughing

Hi everyone,

My eldest daughter likes to eat macaroni with cheese like the one at Kenny Rogers.

Does anyone knows how to make this cheese sauce? Or do they just simply heat the cheese in the microwave.

Another thing what type of cheese do they use, coz i've tried using cheddar but its color is not as orange as they serve at Kenny Rogers.

here is the recipe: Always preparing for my son. Pasta and cheese is a MUST for him.
macaroni or any pasta./any shape
cheddar cheese (normally i bought block cheddar cheese)
milk (for my son i use his milk) my slf I use fresh milk
mix veggies.
instructions:
cook pasta accordingly
boil mix veggies
once both cooked, add some milk and cheese.
I don't know how to measure all the ingredient, just agak agak.
