Can you drop everything for a job elsewhere?

Let’s say you have a short term contract to work somewhere for a few months. They pay well. Can you leave your children behind and go for the job? So many of my nurses friends are doing that now. A lot of them had been away for around two years and they did earn a lot of money to bring back home.
So, if you are in that position can you go and earn money, while leaving your children with someone you trust back home? I think I won’t be able to do it. Even if I have some cushy jobs like what those companies are offering in Atlanta jobs. It will be just too hard for me.
